Osetra Malossol is mid-size, firm, brownish-gray eggs with a delicate fruity or nutty flavor. This roe is havestedfrom fish that can weigh up to 600 pounds. These appetizing eggs take at least 12 years to properly mature in the Iranian waters of the Caspian sea.

The Osetra Sturgeon (Acipenser Persicus). The medium-sized family member: omnivorous like its brothers, a sea bed prober with an extendable snout under a medium-point nose, equipped to indiscriminately vacuum up plants and small forms of sea life. It becomes 2 meters long and tips the scales at 200 kg. The average osetra is 1.2 m long and weighs between 20 and 80 kg.
