Our Iranian Imperial Osetra caviar from the Persian Persicus, is the perfect mid-size egg. This roe has a bright golden hue and a delicate nutty flavor, a flavor that has been the choice of presidents and royalty through out the world. This caviar roe is harvested from the Osetra sturgeon (Acipenser Perscius) that can weigh up to 600 pounds taking at least 12 years to properly mature in the Iranian waters of the Caspian Sea.

The medium-sized family member omnivorous like its sister, is a sea bed prober with an extendable snout under a medium-point nose. Persicus is equipped to indiscriminately vacuum up plants and small forms of sea life. It becomes 2 meters long and tips the scales at 200 kg. The average Osetra is 1.2 m long and weighs between 20 and 80 kg.
