Bowfin, are known in the caviar world for their shinny small flavorful eggs that come from the long survivors of an earlier primitive family of fish known mostly through fossils. This caviar is extreamly close to the roe of the Hackleback sturgeon in both flavor and size, unfortunatly you will be unable to use this roe for any type of cooking. the caviar will mysteriously turn red. The adult bowfins usually reach a length of about 2 feet and weigh between 2-5 pounds.
