Hackleback also know as a shovelnose caviar and is a prized caviar for its swee,t buttery flavor that looks like black velvet. When examining the roe you will also notice that the roe is extreamly shinny in appearance.

The Hackelback sturgeon is native to Mississippi / Missouri river, it is the smallest and most common sturgeon in North America, rarely exceeding 3' in length, Sometimes called called Shovel Sturgeon or the Sand Sturgeon.
